Sir Rocco Forte and Alain Roux celebrate the opening of the new Brasserie Prince restaurant at iconic Balmoral hotel

Michelin starred chef Alain Roux and Sir Rocco Forte have now officially opened the new Brasserie Prince restaurant at the Balmoral Hotel in Edinburgh. The multi-million pound refurbishment was managed by John Rowan and Partners, who also oversaw the recent renovation of Rocco Forte Hotels’ Brown’s Hotel in London.

The opening of the restaurant, which was redesigned by Martin Brudinizki in collaboration with Olga Polizzi, Rocco Forte Hotels’ director of design, is part of the ongoing five-year refurbishment of the five-star hotel.

Over the past 2 years, John Rowan and Partners has project managed the renovation of 75 rooms, including the signature J.K. Rowling and Scone & Crombie suites, as well as the renovation of the hotel conference suites and now the new restaurant.

Mrs Polizzi is very much celebrated for her contemporary twists on traditional design and she has really succeeded in bringing the landscape of Scotland into the hotel.”

With Alain Roux now in residency within the hotel’s newest restaurant, Brasserie Prince, and the room renovations progressing, guests can experience some of the most coveted views in the city as well as some of Scotland’s finest dining.
